Internet Texas Hold'em by Matthew Hilger.
Structure
Each chapter approaches a specific aspect, or situation, of the game. For example, "Probability and odds" covers the basics of probability and "Two Pair" explains what should be done when the flop matches both hole cards.
Unlike many other books, Hilger's material is an applied, clear approach. Rather than speaking of abstract topics and generalities he provides actual situations with specific action plans. For newcomers this may be a significant benefit.
Tests
Ensuring a good understanding of what was just written, Hilger provides small tests at the ends of the chapters. These present real poker playing situations and require choosing the next action. The correct answer derives from content contained in the preceding chapter.
Answers are presented along with a clear explanation of why it is the correct choice. The correct choice of course according to the strategies as described in the book.
